One easy Dinner

Its monsoon season here and we are having both hot (when its not raining) and cold (when its raining) climate. As you all know monsoon is a fun season but it also brings flu with it. Ughhh!!!!! The only thing I hate about Monsoon is this.  Well nobody at home is suffering from any of those so far at least not down yet. Cough and cold been in n out for a few days. But everyone’s appetite is intact and nobody has a bad palette. So….I made something quick and tasty for tonight and why not share it right???.

Here is what you need

Flattened rice/ poha / Aval – 2 cups (soaked in salt water and drained)

Onion – 2 medium ( finely chopped)

Roasted Peanuts (salted) – a handful

Green Chilly – 3 

Ginger – 1 inch piece

Garlic – 4 or 5 cloves

Curry leaves – half a handful

Mustard seed – 1 tsp

cumin- 1 tsp 

Turmeric powder 1/2 tsp

Asafoetida – a pinch

Coconut oil – 3 tbsp

Salt – to taste

Grated coconut – 1/4 cup (optional)

In a frying pan add the coconut oil, once hot add in the mustard and curry leaves after spluttering add in the ginger, garlic and saute for a minute or so then dump the green chilly, cumin and onion, saute till transparent. Then add in the peanuts mix well. Let it absorb a bit of the flavor then mix turmeric powder, asafoetida  and a pinch of salt. Then dump the soaked Aval into it and combine all together. close the lid for a moment then scatter a bit of grated coconut and you are done. 

Tip – I’ve used brown aval in here, if you have white one do not soak the aval in salt water.It will become mushy. Just sprinkle some salt water in it.
